Brinjal/eggplant is rich with lots of nutritional benefits.It is good to include eggplant /Brinjal in our diet.
Brinjal fry/eggplant fry is a very simple recipe which can be prepared very quickly within 5 minutes.It is nit at all a time consuming vegeterian recipe.
Here i have shown another variation for this Brinjal/Eggplant fry ,that is Rava fry.Coating with rava on the brinjal slices takes it to an entirely different level.This will give a nice crunchy coating for this eggplant /brinjal.Serve this immediately after fryiing for maintaining the crispiness and taste.
Prepare masala adding turmeric powder,chilli powder,salt and water.
make thick paste of masala.coat well on both sides of the brinjal slices.Pour some oil for shallow frying this brinjal /eggplant slices.cook this for 3-4 minutes in medium flame.flip the side and make sure both the sides cooked perfectly.theses are done!!!!!!!prick with a fork and if u feel that they are soft,these are ready to serve.for another variation coat rava on both sides of the eggplants
fry this until we get a crispy outer crust and serve immediately.
