NO COOK COCONUT BURFI

Coconut burfi is an Indian dessert which has an amazing flavor of coconut.No cook coconut burfi can be prepared very easily at home, just combine all the ingredients and let it rest for half hour or something inside the refrigerator.That’s all. Here i have used desiccated coconut ,but we can always use freshly grated coconut for making this instant burfi. Let’s see how to make it :

INGREDIENTS

Desiccated Coconut -1&1/2 cup

Condensed milk-1/2 cup

Cocoa powder -2 tbsp

Saffron milk-3 tbsp

METHOD

  • In a mixing bowl ,combine condensed milk and desiccated coconut.
  • Use your hand and mix everything together.
  • Take half portion of the mixture and mix it with cocoa powder .This will give a nice chocolaty flavor for burfi.
  • The remaining portion mix with some saffron milk.This would give a beautiful yellowish color for the burfi.
  • Take a small container and line it using a butter paper or cling wrap.
  • Add saffron flavored burfi mixture and spread it evenly .
  • Refrigerate it for 15 minutes.
  • Now add the remaining burfi portion and spread it on top of the saffron flavored burfi mixture.
  • Refrigerate it for another 15 minutes.
  • Coconut burfi would be ready to serve.

STEP BY STEP INSTRUCTION WITH PICTURES

Combine desiccated coconut and condensed milk.
Half portion of the mixture mix with cocoa powder.
Chocolate flavored burfi mixture
Remaining burfi mixture .
Line a butter paper and spread the burfi mixture evenly.Let it rest for 15 minutes
Layer it with chocolate flavored portion and refrigerate for another 15 minutes .
Cut and serve !!!!

GARLIC MURUKKU/POONDU MURUKKU RECIPE

South indian poondu murukku or garlic murukku is an absolutlety delicious and kids’ favorite snack recipe .This snack is quiet easy to prepare and it’s unique flavor makes this scruptious snack a go to recipe which i prepare very often in my home .

INGREDIENTS

Besan-1 cup

Rice flour-1/2 cup

Garlic cloves -3

Turmeric powder -1/4th tsp

Chilli powder -1 tsp

Asafoetida-1/4th tsp

Ghee -1/2 tbsp

Salt

Water for kneading the dough

METHOD

  • Put the garlic cloves in a grinder and grind it by adding 1/4 th cup of water.
  • Strain garlic juice using a strainer and remove all the tiny bits and pieces if any.
  • Take a Mixing bowl and add besan, rice flour,turmeric powder ,chilli powder ,asafoetida and salt.
  • Add strained garlic juice .
  • Knead the dough really well by adding some water .
  • Add 1/2 tbsp of ghee which will make the murukku even more flavorful and crispy.
  • Heat some oil for deep frying in a kadai.
  • Once the dough is ready fill the murukku maker with the prepared dough.
  • Squeeze it on a ladle and keep the ladle into the oil for few minutes.
  • Drop the murukku gently by sliding with a spoon or knife.
  • Deep fry and flip in between.
  • Fry until murukku changes it’s colour and becomes crispy.
  • Crispy Garlic murukku will be ready to serve !!!

Grind garlic by adding 1/4th cup of water.
Strain garlic juice and keep aside.
Take a mixing bowl ,add besan,rice flour,turmeric powder,chilli powder,asafoetida,salt and ghee.
Add strained garlic juice .
Mix it well adding some water and knead the dough until it forms into a soft dough.
Filling murukku maker with the dough .
Squeez it out on a ladle .
Drop it on to the hot oil.Wait for few minutes.
Gently drop it and fry unti it turns crispy and golden in colour.
Crispy garlic murukku is ready to serve

SUGAR FREE BANANA PUDDING

Today i am going to share with you one of the simplest dessert recipes which belongs to the category of firless cooking .All you need to do is put some sliced bananas in the freezer section in advance .For the creamy and smooth banana pudding always use frozen bananas.This no sugar dessert can be enjoyed either as a breakfast or as a snack ,which will leave you feeling satisfied and full till the very next meal.Here’s the recipe :

INGREDIENTS

Sliced frozen bananas -2

Cocoa powder -2 tbsp

Milk-1/4th cup

Honey -1 tbsp

METHOD

  • Take a blender jar and add all the ingredients (banana slices,milk,cocoa powder and honey)
  • Transfer into a pudding bowl.
  • Add some chopped fruits and nuts .(apple,dates ,cashews etc.)
  • Serve and enjoy your meal.

NO COOK APPLE CARROT SANDWICH RECIPE

INGREDIENTS

Bread slices

Grated apple-1

Grated carrot -1

Mayonnaise-1&1/2 tbsp

cinnamon powder -1/2 tsp

METHOD

  • Finely grate apple and carrot separately
  • Squeeze out the moisture from apple and keep it aside. Excess moisture from apple will make the sanwiches soggy.
  • Take a bowl and all grated apple and carrot.
  • Add cinnamon powder and mayonnaise which will give a unique flavor for the filling.
  • Filling is ready.
  • Take two bread slices ,trim the edeges and add prepared filling in one of the bread slices .cover it with another slice of the bread .
  • Prepare all sandwiches this way.
  • As a healthier version we can use whole meal bread or brown bread slices for making sandwiches.

MASALA PEANUT /RAJA SPECIAL MASALA PEANUT

Masala peanut or Raja Special masala is one of my favorite snacks which i love to much on while binge watching some movies or TV shows .peanut chaats can be considerd as a healthier alternative compared any other deep fried snacks .This less oil recipe requires very few ingredients which will be readily available at home .

INGREDIENTS

Peanuts-1 CUP

chaat masala -1 tsp

kashmiri chilli powder-3/4th tsp

lemon juice-1 tbsp

tomato -1/2 piece

green chillies -2

coriander leaves

salt

grated cucumber -1 tbsp

coconut oil -1 tsp

METHOD

  • Take 1 cup of peanuts in a microwave safe bowl .Microwave for 5 minutes.
  • Take a pause in between and give it a quick stir .
  • After 5 minutes ,peanuts would turn into hot and crisp.
  • Let it cool down.peel the skin off from peanuts.It’s a bit time cosuming process.But it’s worth it.
  • Once it is clean add all other ingredients.(Chaat masala ,kashmiri chilli powder,onion,tomato ,green chillies,cucumber ,coriander leaves,lemon juice ,s and salt)
  • Mix well.
  • Finally drizzle some coconut oil for some extra flavor.
  • spicy and tangy flavored Peanut masala will be ready to serve.

METHOD

REMOVE EXCESS SALT WATER FROM TUNA CHUNKS AND KAEEP IT ASIDE.

HEAT A PAN ADD 1 TBSP PF OIL

SAUTE FINELY CHOPPED ONIONS AND CAPSICUM UNTIL THEY GET HALF COOKED

ADD TURMERIC POWDER,KASHMIRI CHILLI POWDER AND MIX WELL.

ADD TUNA CHUNKS ,MIX IT WELL WITH MASALA, LET IT COOK FOR FEW MINUTES.

CHECK THE TASTE AND SPRINKLE SOME SALT.

FINALLY ADD SOME CORIANDER LEAVES AND SWITCH OFF THE FLAME.

FILLING IS READY LET IT COOL FOR A WHILE.

STEAM COOK THE BREAD SLICES FOR FEW SECONDS ,THIS WAY WE CAN FOLD THE ROLL UPS EASILY WITHOUT BREAKING IT.

FLATTEN THE BREAD SLICES USING A ROLLING PIN .

ADD PREPARED TUNA FILLING  AND SOME MOZZARELLA CHEESE.

 GENTLY  ROLL IT UP.

MAKE ALL THE BREAD ROLLS FOLLOWING THE SAME PROCEDURE.

ONCE IT IS READY DIP EACH BREAD ROLL IN THE EGG BATTER AND COAT IT WELL WITH BREAD CRUMBS.

REFRIGERATE IT FOR 15 MINUTES.

HEAT SOME OIL IN A FRYING PAN FOR DEEP FRYING BREAD ROLLS.

FRY THIS UNTIL IT BECOMES CRISPYY AND BROWN IN COLOUR.

SERVE HOT WITH SOME TOMATO KETCHUP.

remove excess salt water from tuna chunks
heat oil in a pan ,add onions and capsicum, saute it for few minutes .
add masala (turmeric powder, chilli powder, garam masala and salt) let it cook for few minutes.
flatten the bread slices and add filling along with mozerella cheese .Roll it up and keep aside.

Dip in egg wash and coat well with bread crumbs .
Deep fry until crispy
crispy bread rolls are ready to serve !!!!

CRISPY CORN /CHATPATA CRISPY CORN RECIPE

INGREDIENTS

CORN COBS-2

CORN FLOUR -2&1/2TBSP

RICE FLOUR-3TBSP

SALT AS PER TASTE

OIL FOR FRYING

FOR SEASONING

CHILLI POWDER -1/2 TSP

CHAAT MASALA -1/4TH TSP

CUMIN POWDER-1/4TH TSP

LEMON JUICE -1 TSP

CHOPPED ONIONS FOR GARNISHING

METHOD

  • Wash the corn thoroughly and deseed the corn kernels
  • Take a bowl add corn kernels along with corn flour, rice flour and salt
  • sprinkle some water little by little and make sure corn kernels are nicely coated.
  • Fry this in batches ,until it becomes crispy.
  • Mix it with all the seasoning ingredients.
  • serve hot .

HEALTHY BANANA SMOOTHIE

super healthy banana smoothie recipe .

INGREDIENTS

Banana -2

milk -4 tbsp

honey -1 tbsp (optional)

coco powder -1 tsp

apple -1/2 piece finely chopped

METHOD

Peel off bananas ,cut them in to small pieces.

freeze it for 3-4 hrs in a zip lock bag.

Take a blender jar ,add frozen bananas along with milk and coco powder .

blend it till  it forms in to a creamy texture .

transfer this  in to serving glass, add honey and chopped apple.

Enjoy .

 

Note:

You can even fill this in to the popsicle mould, without adding chopped fruits, and freeze it for  4-5 hrs and serve it like popsicle.

We can even add more chopped fruits like, green apples, pear, dry fruits, nuts ,dates etc. in to the banana smoothie and serve it like  a fruit salad.

 

 

 

CHICKEN SPRING ROLLS

CHICKEN SPRING ROLLS

Easy to make evening snack recipe.

INGREDIENTS

chicken breasts-2

Minced garlic-5

Grated carrot-1

Grated cabbage-2 cup

Spring onions-1/4 th cup

Pepper powder-1&1/2 tsp

Soya sauce-1 tsp

Red chilli sauce-1 tsp

Salt to taste

Readymade spring roll sheets-20

Maida/ All purpose flour-1 tbsp

Oil for deep frying

METHOD

*Marinate the chicken pieces with 1/2 tsp of pepper and salt.Keep the marination for 10 minutes.

*Cook this until chicken become soft .

*keep it aside and once it cools down shred the chicken pieces

*Heat a pan , add 1 tbsp of oil , sauté minced garlic until it ‘s raw flavour go off.

*Add grated cabbage and carrot ,sprinkle some salt and 1 tsp of pepper powder.

*Mix well and let it cook for 2 minutes, add shredded chicken along with soya sauce and chilli sauce.

*Combine everything very well and cook for another 2 minutes.

*Switch off the flame and let it cool.

*Take a small bowl add all purpose flour and make a thick batter by pouring water.

*Take a spring roll sheet add 1 tbsp of prepared chicken filling.

*Roll it till the middle portion and fold it from sides .

*Roll it up and seal the edge with the prepared maida batter.

*Make all the spring rolls like this.

*You can make 20 spring rolls with this much of filling.

*Heat enough oil for deep frying. Deep fry all the spring rolls until it’s colour become golden .

*Serve hot with some tomato ketchup.

NOTE.

•Keep the spring roll sheets out the refrigerator 1 hour before preparation.

•Cover the spring roll sheets with a damp towel, this way spring roll sheets will be moist and soft.

•Once the spring rolls are ready to fry you can either deep fry all or freeze it up to two weeks in a ziplock bag.

• Make sure that the edges of the spring rolls are sealed well with the maida batter. Otherwise filling will come out while deep frying the spring rolls.

CRISPY PANEER POPCORNS /PANEER NUGGETS RECIPE

Paneer popcorns can be served as an evening snack or as a starter.

Ingredients

paneer cubes-20

Ginger garlic paste- 1 tsp

Turmeric powder-1/4 tsp

Kashmiri chilli powder -1 tsp

Pepper powder-1 tsp

Salt

Cornflour- 2 tbsp

Bread crumbs for coating

Oil for deep frying

METHOD

Marinate the paneer cubes with ginger garlic paste, turmeric powder, Kashmiri chilli powder , pepper powder and salt.

Keep the marination for 10 minutes.

Take a bowl , add cornflour , pour water little by little and make a cornflour batter.

Dip each paneer cube in the cornflour batter and roll it on the bread crumbs and coat well.

Once again dip same paneer cube in the corn flour mixture and give a double coating for the paneer cubes.

This will give a nice crispy coating for paneer popcorns.

Prepare all the paneer cubes like this.

Refrigerate for 10 minutes.

Deep fry this in medium hot oil until paneer cubes turn crispy  and golden in colour.

Serve hot with tomato ketchup.
