SWEET BANANA BALLS/BANANA BAJJI

simple evening snack recipe with ripe banana .

INGREDIENTS

RIPE BANANA -2

GRATED JAGGERY-3 TBSP

MILK-4TBSP

CARDAMOM POWDER-1/4 TH TSP

BAKING SODA -1/4TH TSP

MAIDA/ ALL PURPOSE FLOUR-1 CUP

OIL FOR DEEP FRYING

 

METHOD

  • TAKE A BLENDER JAR ,ADD RIPENED BANANA,GRATED JAGGERY,MILK AND CARDAMOM POWDER.BLEND IT WELL ,UNTIL WE GET A SMOOTH BATTER.
  • TRANSFER THIS SMOOTH BANANA MIXTURE IN TO A BOWL,ADD MAIDA AND BAKING SODA .
  • MIX WELL.
  • ONCE THE BATTER IS READY ,DEEP FRY THIS IN BATCHES.
  • DROP THE BATTER  LITTLE BY LITTLE IN HOT OIL ,USING  A SPOON.
  • FLIP IN BETWEEN AND FRY UNTIL IT TURNS GOLDEN BROWN COLOUR.
  • TRANSFER THIS IN TO AN OIL ABSORBANT PAPER.

HOMEMADE CHOCOLATE RECIPE

Simple homemade chocolate recipe with three ingredients

INGREDIENTS

COCO POWDER-3 TBSP

BUTTER-1 &1/2 TBSP

HONEY-2 TBSP

METHOD

  • Take a bowl add coco powder and melted butter .Combine well.
  • Add honey and mix well.
  • Take  a chocolate mold and grease it with some butter.
  • Pour prepared chocolate batter in to the mold and freeze it for 2 hours.

  • IF THE CHOCOLATE BATTER IS READY ,JUST TASTE ,IT IF U FEEL THE BITTER FLAVOUR OF COCO POWDER ,YOU CAN ADD MORE HONEY TO MAKE IT EVEN MORE SWEETER.
  • AS AN ADDITONAL INGREDIENT YOU CAN FINELY CHOPPED DRY FRUITS AND NUTS ALONG WITH THIS.
  • CHOCOLATES WILL MELT ONCE IT REACHES THE ROOM TEMPARATURE  .SO STORE IT INSIDE THE REFRIGERATOR.

KERALA ELA ADA RECIPE

INGREDIENTS

RICE FLOUR -2 GLASSES

GRATED JAGGERY -200 GMS

GRATED COCONUT -1

BOILING WATER -3 GLASSES

GHEE-1 TBSP

BANANA LEAF

 

METHOD

  • First we need to prepare filling for the Ela ada .
  • Take a bowl and mix grated jaggery and grated coconut ,combine well.
  • Boil 3 glasses water with little bit of salt.
  • Take another bowl add rice flour ,Pour boiling water little by little to the rice flour and mix well with a spoon.
  • Pour 1 tbsp of ghee.
  • Once we feel that the  heat is manageable ,knead it well and make a smooth dough out of it.
  • Banana leaf should be cut in a rectangular shape ,place it over the flame so that we can fold it properly and it will not tear while folding.
  • Grease each banana leaf with some oil.
  • Take a small portion out of the rice dough ,spread it thin evenly using finger tips.
  • Half portion cover with prepared filling ,coconut jaggery mixture and fold it.
  • Steam cook for 10-15 minutes medium flame.
  • Tasty Ela ada will be ready to serve!!!!

HOMEMADE CORIANDER POWDER

INGREDIENTS

CORIANDER SEEDS-1 K.G.

CURRY LEAVES-1&1/2 CUP

METHOD

  • Take a heavy bottom pan,add fresh coriander seeds and curry leaves.
  • Dry roast it until they become crisp and brown in colour.
  • Roast in a medium flame,Keep stirring continuously.Do not burn it.
  • It may take around 10 minutes.
  • Once they become aromatic ,allow this to cool down .
  • Using a blender jar make smooth fine powder.
  • Store this fresh coriander powder in an air tight container.
  • This will remain fresh for about 6 months.

BROCCOLI EGG SANDWICH

 

IMG_2036Protein rich broccoli egg sandwich is an excellent breakfast dish for kids as well as adults.

INGREDIENTS

finely chopped broccoli-1&1/2 cups

eggs -2

turmeric powder-1/2 tsp

pepper powder-1 tsp

chilli powder-1 tsp

salt

chedder cheese

bread slices

tomato ketchup

Oil-1&1/2 tbsp

 

METHOD

  • In a bowl break 3 eggs and whisk it well.
  • Add turmeric powder,chilli powder and salt .Mix well.
  • Heat a pan and  add some oil,add finely chopped broccoli saute it well just to get rid off the raw taste.
  • Add some pepper powder and salt .Mix well.
  • Pour the egg batter and mix well.
  • Filling is ready .keep this aside.
  • Take two slices of the bread ,spread some tomato ketchup in both bread slices.
  • Add some in one slice of the bread,sprinkle some cheese ,cover it with the other slice of the bread.
  • Toast the sandwiches until they become crispy and golden in both sides.
  • Healthy and delicious broccoli egg sandwiches are ready to serve!!!!!Enjoy!!!

CHAKKA VARATTIYATHU/JACKFRUIT JAM

Today’s recipe is one of my personal favourites ,Chakka varattiyathu or jackfruit jam .During jackfruit season we make this very often in our home.The procedure is a kind of time consuming one.The ingredients required are:

INGREDIENTS

Deseeded Ripe jackfruit -500 gms

Ghee -3 tbsp

jaggery -300 gms

salt-1/4 tsp

water-1/2 cup

 

METHOD

  • Take a pressure cooker add ripe jackfruits ,salt and 1/2 a cup of water.Pressure cook this until they become mushy and soft.
  • Take a pan ,pour 1/2 cup of water along with jaggery and prepare jaggery syrup.
  • In a heavy bottom pan add cooked jackfruits ,strained jaggery syrup and ghee.
  • cook this until everything will get well combined and jackfruit puree will be transformed in to a jam consistency.
  • This will take about 20-25 minutes.

STEP BY STEP PROCEDURE OF MAKING CHAKKA VARATTI

Take  a pressure cooker add chopped ripe jackfruits,salt and 1/2 cup of water.

pressure cook for 3 whistles .

preparing jaggery syrup .

Jaggery syrup is ready.using a strainer seive this to remove all the dirts and impurities.

jackfruit cooked well.Mash it very well using a spoon.

Take a heavy bottom pan ,add cooked jackfruits, jaggery syrup and ghee.

stir it continously until water gets evaporated .

Note:

we can add 1/2 tsp of cardamom powder for extra flavour.

CRISPY CABBAGE PAKORAS/CABBAGE PAKODA RECIPE

Cabbage pakoras can be prepared with very few ingredients and spice powders.This no onion no garlic snack recipe is a must try one.I have added green chillies in this pakodas to make little bit spicy .If you are serving this for kids you can skip green chillies and make it less spicy.Adding little bit of hot oil in to the mixture will make this pakoras super crispy.Great evening snack to devour with a cup of tea.

INGREDIENTS

Chopped cabbage -2 cups

chopped green chillies-2

Finely chopped ginger-1 small sized

Turmeric powder-1/4th tsp

Chilli powder-1 tsp

Asafoetida -1/4th tsp

salt

Gram flour-1/2 cup

Rice flour-1 tbsp

water

oil for deep frying

METHOD

  • In a bowl add finely chopped cabbage, green chillies, ginger,t urmeric powder ,chilli powder ,asafoetida and salt.
  • Pour 1 tbsp of hot oil in to the mixture and mix well.(Use oil what we use for deep frying the pakoras)
  • Add  gramflour / Besan and rice flour .
  • Sprinkle some water little by little, just to combine everything.
  • Do not add too much water in to this ,pakoras may soak up a lot of oil and it may become soft.
  • Oil should be medium hot .
  • Deep fry all the pakoras until they become golden in colour and crispy in texture.
  • Serve hot with some tomato ketchup.

Take a bowl add finely chopped cabbage,green chillies,ginger,turmeric powder,chilli powder ,asafoetida and salt.

Pour some hot oil and mix well.

Sprinkle little water just to bind all the ingredients and make the batter

Deep fry these pakoras in batches ,until they become crispy . and golden in colour.

NOTE

  • while preparing the mixture if we add some hot oil or ghee ,pakoras will become more crispy .
  • Adding too much water will make this pakoras too oily and soggy.
  • Deep fry these pakoras in small batches.Otherwise oil temperature may reduce all of a sudden and crispiness will reduce.
