Tamarind and dates chutney is a beautiful blend of sweet and tangy flavour with a hint of spiciness.This chutney is very simple and takes a few minutes to prepare.Key ingredient for most of the Indian chaats are sweet chutney.
deseeded dates-1 cup
dry red chillies-5
cumin powder-1/2 tsp
dry ginger powder-1/2 tsp
In a pan cook dates,jaggery,tamarind and dry red chillies with 1&1/2 cup of water.
Let this cook for 5-8 minutes until it reaches in to soft and pulpy texture.
Allow this mixture to cool down completely.
Grind this mixture and make a fine paste.
Using a strainer seive this and remove all tiny pieces.
Once again boil this chutney and add enough salt,dry ginger powder and cumin powder .
switch off the flame , let it cool down.
serve it along with some pakodas,chaats ,samosas etc.
Sweetness and spiciness of the chutney can be adjusted as per the desired taste preferences.
If chutney is too thick thin it down adding some more water.
Aloo bonda or potato bonda is one of the easiest snacks we can prepare at home during holidays or when you have guests at home.For preparing this first i have boiled potatoes using a pressure cooker.Always use good quality potatoes for this bond to make this filling tastier and yummy.
green chillies -2
cumin powder-1 tsp
urad dal -1 tsp
besan/gram flour-1&1/2 cup
turmeric powder-1/4 tsp
baking soda-1/4 tsp
chilli powder-1 tsp
oil for deep frying
First boil potatoes and remove its skin,cut them in to cubes
In a pan pour some oil,splutter some mustard seeds ,add some urad dal.
when its colour slightly changes add ginger,green chillies ,sliced onions and curry leaves.
saute it well and add some turmeric powder,Mix it well.
Add boiled and cubed potatoes.Mix well.
Mash the potatoes using a potato masher ,add some lemon juice, cumin powder and salt.
Combine everything well .
Switch off the flame and let it cool down.
In a bowl Add Gram flour ,turmeric powder,chilli powder,asafoetida,baking soda and water.
Make a thick batter of gram flour.It should not be watery.
Make small balls of potato out of the mixture .
Dip this balls in to the prepared besan batter ,coat well with the batter ,each potatao balls.
deep fry this potato balls until it gets a crispy outer crust.
Once it is ready transfer this in to an oil absorbant paper.
serve hot with some tomato ketchup or green chutney.
Here i have prepared whole masoor dal curry or sabut dal curry using pressure cooker.This masoor dal curry can be prepared very quickly and it tastes super delicious.This protein rich whole masoor dal curry can be served along with some rice,chapathi etc.Sabut masoor dal is highly nutritious and it’s extreamely good to include in our diet.This curry can be preapared very quickly since pre soaking is not required for this dal.
paneer or cottage cheese is a key ingredient for most of the indian dishes.This indian fresh cheese can be made easily at home using some fresh milk.Paneer can be used to prepare variety of the indian dishes like,paneer paratha,palak paneer,matar paneer etc.Most of the time i use paneer to prepare paneer sandwiches which is one of my favourites.I crumble the paneer cubes and make delicious filling for the sandwiches,which will be loved by adults as well as kids.Here you can see the step by step procedure for making simple homemade paneer.

If vinegar is not available we can use lemon juice to curdle the milk.
Today i am here with a simple egg omelette recipe,cheese vegetable omelet .This omelette resembles a lot with pizza ,once it gets cooked.Here i have used colorful bell peppers or capsicums which makes this omelette even more appealing.You can add any vegetable of your choice ,but make sure veggies can be cooked easily to make it a time saving process.
Onion-1 small sized
Capsicum/Bell peppers: 1 cup, different coloured ( green, orange, yellows &red)
Shredded Mozzarella Cheese-1/2 cup
Turmeric powder:1/2 tsp
Pepper powder:1/2 tsp
Salt-as per taste
Coconut oil-2 tsp Method
Break eggs in to a bowl .Add turmeric powder,chilli powder,pepper powder and salt . Beat the eggs with a fork or spoon to combine all the masala. Pour 1 tbsp of water whisk it well and keep it aside.
Take a nonstick pan and drizzle some coconut oil .Add green chillies sauté it and add the finely chopped onions . When it slightly changes the colour , add chopped bell peppers. Fry this for some time. Keep the flame low and pour the egg batter in to this . Stir it for a while. Cover it with a lid and cook for almost 3-4 minutes.Now we can put the shredded mozzarella cheese,cover it again and cook until cheese melts down completely.The juicy and fluffy omelette will be ready to serve now.Enjoy😊
Netholi fish/Anchovi fish is a very tasty fish .Nethili fish can be used to prepare variety of fish curries.Today i am going to preapre a crispy fish fry using this fish.I have already uploaded a video of NETHOLI FISH CURRY in my youtube channel .Link will be included in this post.So lets see what all ingredients are required for making this crispy fish fry.
ginger -medium sized
lemon juice-1 tbsp
turmeric powder-1/4 tsp
pepper powder-1 tsp
corn flour-1 tbsp
oil for deep frying
Clean the fish thoroughly .
Prepare masala for the fish fry.
In a blender jar add shallots,ginger,garlic,lemon juice,curry leaves,chilli powder,turmeric powder,pepper powder.Grind and make a very fine paste adding some water.
Once the paste is ready ,we can add enough salt.
just before marination add rice flour and corn flour along with the masala.
coat fish pieces with prepared masala .
once we add corn flour and rice flour no need to keep the marination for longer time.
Deep fry the fish pieces with enough oil.I prefer to use coconut oil for this fish fry.Also i would like to add a generous amount of curry leaves to enhance the flavor of fish fry.
Now our crispy Netholi fish fry will be ready to serve!!!!!!!!!!!!!!!!!!!!!!!
Instead of lemon juice we can add some vinegar while grinding,which will help the masala to seep in to the fish pieces.
Spice level you can adjust as per your tolerance level.
Adding fresh curry leaves makes the fish fry even more tastier.
Use coconut oil to get the flavor of authentic Kerala fish fry.
Chicken liver fry is a simple recipe to prepare as a side dish for rice or chapati. Since pepper powder is the key ingredient for this recipe ,i would like to call this recipe as chicken liver pepper fry.Here first of all i am going to cook these marinated chicken liver separately, so that chicken liver will get cooked well and it will not taste raw at all.Shallots or small onions are used for preparing masala ,we can replace this with normal onions ,but do not use more quantity ,since it would make the gravy little sweet in flavor. I prefer to cut these liver in to small pieces to coat well with flavorful masalas.
