Crispy peanut chikki/Kadala mittai recipe.
peanuts- 1 cup
Powdered jaggery-1 cup
Water -1&1/2 tbsp
. Heat a pan and dry roast peanuts until they become crisp. It will take 3-4 minutes .
Transfer this in to plate and let it cool .
Remove the skin of peanuts and keep it aside.
Heat a pan add powdered jaggery and water. Let it melt well and prepare jaggery syrup.
Cook this until the consistency of the jaggery syrup turns in to sticky form.
Add peanuts and mix well.
spread this on a butter paper and place another butter paper on top of it, using a rolling pin spread the mix evenly.
Using a knife cut them in to the required shape before cooling.
Let it cool completely.
Serve and enjoy.
This soya chunks curry is a best side dish for chapati or rice.This protein rich soya chunks recipe is a must try for every one ,especially for the vegetarians. Soya bean curry can be prepared very quickly.these dry soya chunks we need to soak for 20-30 minutes in boiling water and wait until it becomes soft.
soya chunks-2&1/2 cups
chilli-2 tsp (mild spicy)
chicken masala-2&1/2 tsp
ginger garlic paste-1&1/2 tbsp
soak soya chunks for 20 minutes in boiling water and cut them in to small pieces.
saute all the veggies like onion s,ginger,garlic.green chillies ,tomato until they become mushy ,using enough oil.
Add masalas turmeric powder,chili powder and chicken masala .Saute well.
add 1 cups of water let it boil ,add enough salt.
add soya chunks and mix well.
Coat well with the masala and cook for 4-5 minutes in medium flame.
cover it up with a lid and cook until it becomes soft.
check salt and if required.cook this until it becomes dry.
soya chunks roast and well absorbed with all the flavors and ready to serve.
some coriander leaves for garnishing!!!!!!!

Brinjal/eggplant is rich with lots of nutritional benefits.It is good to include eggplant /Brinjal in our diet.
Brinjal fry/eggplant fry is a very simple recipe which can be prepared very quickly within 5 minutes.It is nit at all a time consuming vegeterian recipe.
Here i have shown another variation for this Brinjal/Eggplant fry ,that is Rava fry.Coating with rava on the brinjal slices takes it to an entirely different level.This will give a nice crunchy coating for this eggplant /brinjal.Serve this immediately after fryiing for maintaining the crispiness and taste.
Brinjal./EGGPLANT-1 (500 GMs)
Chilli powder-3 tsp
Turmeric powder 1/4 tsp
Slice the brinjal in round shape
Prepare masala adding turmeric powder,chilli powder,salt and water.
make thick paste of masala.
coat well on both sides of the brinjal slices.
Pour some oil for shallow frying this brinjal /eggplant slices.
cook this for 3-4 minutes in medium flame.
flip the side and make sure both the sides cooked perfectly.
theses are done!!!!!!!
prick with a fork and if u feel that they are soft,these are ready to serve.
for another variation coat rava on both sides of the eggplants
fry this until we get a crispy outer crust and serve immediately.
