Butter chicken is one of my family favorites. Boneless chicken pieces soaked in spiced creamy vegetable gravy .It’s really drooling !!!!!!! just by the imagination !!.In this recipe i used minimum ingredients which are mostly readily available at home.Being a calorie conscious one ,most of the time i prepare butter chicken without cream .Here i have used chicken breasts which are protein rich as well as tasty , to prepare this delicious chicken curry.

Boneless chicken -500 gms
tandoori chicken masala-1&1/2 tbsp
onion -1 large sized
tomato-1
cashew nuts-1/4 cup
curds-1tbsp
ginger garlic paste-1 tbsp
turmeric powder-1/2 tsp
chilli powder-2 tsp
garam masala -1/2 tsp
bay leaf-1
cococnut milk-2 tbsp
Butter- 2 tbsp
kasuri methi-1 tsp
salt
cut the chicken in to small piecesmarinate the chicken with curds,tandoori masala,ginger garlic paste and salt.keep the marination for 10-15 minutes.saute all the veggies ,bay leaf and cashew nuts by adding 1 tbsp of butter.add turmeric powder, and chilli powder.let the masala cool down for sometime.grind this adding some water and make a thick fine paste.ground masala is readycook marinated chicken by adding some 1 tbsp of butteradd ground masala .add salt if required .Adjust the consistency of the gravy by enough water and finally pour some thick coconut milk on the top of this.Add some kasuri methi or dry fenugreek leaves .Serve hot with some chapati ,rice or naan.

This soya chunks curry is a best side dish for chapati or rice.This protein rich soya chunks recipe is a must try for every one ,especially for the vegetarians. Soya bean curry can be prepared very quickly.these dry soya chunks we need to soak for 20-30 minutes in boiling water and wait until it becomes soft.
soak soya chunks for 20 minutes in boiling water and cut them in to small pieces.saute all the veggies like onion s,ginger,garlic.green chillies ,tomato until they become mushy ,using enough oil.Add masalas turmeric powder,chili powder and chicken masala .Saute well.add 1 cups of water let it boil ,add enough salt.add soya chunks and mix well.Coat well with the masala and cook for 4-5 minutes in medium flame.cover it up with a lid and cook until it becomes soft.check salt and if required.cook this until it becomes dry.soya chunks roast and well absorbed with all the flavors and ready to serve.some coriander leaves for garnishing!!!!!!!

Brinjal fry/eggplant fry is a very simple recipe which can be prepared very quickly within 5 minutes.It is nit at all a time consuming vegeterian recipe.
Here i have shown another variation for this Brinjal/Eggplant fry ,that is Rava fry.Coating with rava on the brinjal slices takes it to an entirely different level.This will give a nice crunchy coating for this eggplant /brinjal.Serve this immediately after fryiing for maintaining the crispiness and taste.
Prepare masala adding turmeric powder,chilli powder,salt and water.
make thick paste of masala.coat well on both sides of the brinjal slices.Pour some oil for shallow frying this brinjal /eggplant slices.cook this for 3-4 minutes in medium flame.flip the side and make sure both the sides cooked perfectly.theses are done!!!!!!!prick with a fork and if u feel that they are soft,these are ready to serve.for another variation coat rava on both sides of the eggplants
fry this until we get a crispy outer crust and serve immediately.
